Thanksgiving baking, old familiars and exciting new recipes

The Thanksgiving baking starts tomorrow afternoon. Only baking this year, pies and desserts our contribution. With that in mind there will be pumpkin pie, of course! I'm trying something new this year. Modifications include a cup of candied yams and maple syrup. A bit different taste I gleaned from "America's Test Kitchen". Also from them, got a hint of adding ice cold vodka to the pie crust when mixing. The ETOH evaporates and makes a VERY flaky crust. I'm going to try it tomorrow. Heres the finished pie. IN ADDITION....I'll make some mini pies. Love making mini pies! Mincemeat, apple and cherry and maybe some lemon. ALSO it's my golden opportunity to make  pâte à choux....aka: Cream Puffs. Pronounced (paht-ah-shoo)
Pate a choux. I will also dip the tops in dark chocolate......! 
I have never made them before and am really looking forward to it.
